31. •Sekuwa:

It is prepared by roasting the meat which is pre-mixed with different spices in its raw state. A traditional log/wood is used for roasting the meat. The meat can be of buff, chicken or pork. It is a delicious appetizer, praised by many.

32. •Chhoila:

It is a non vegetarian dish made traditionally by the Newars but popular all over Kathmandu city. Chhoila can be buff or chicken. It is served as an appetizer and people love it with local booze. Its preparation also varies. The meat can either be roasted or boiled first. If boiled it is called Mana chhoila and if roasted it is called Haku chhoila. Different seasonings are used and the meat is grilled to prepare chhoila. It is very spicy and is a favourite of many people.
