3/4 cup Sama Rice
1-1/2 cup Water
1/4 cup Chopped Green Beans (omit if you don’t eat in vrat)
1/4 cup Chopped Carrots (omit if you don’t eat in vrat)
1/4 cup Fresh or frozen peas (omit if you don’t eat in vrat)
1 small Potato, chopped
1 small Chopped green chili
1 teaspoon Rai (Mustard seeds) (omit if you don’t eat in vrat)
1/2 teaspoon Red Chili Flakes
1 teaspoon Coriander powder (omit if you don’t eat in vrat)
5-6 pieces of Cashews
1.5 tablespoon Peanuts
Salt to Taste (rock salt)
tablespoon oil/Ghee

You can now start making your dish by assembling all the ingredients. Then, heat the oil in a pan and fry cashews until light brown. After doing so, carefully remove and set them aside for further use. To the same pan, add mustard seeds, and as they start to sputter, mix in chopped potatoes and carrots. Then, add chopped beans and 1/4 cup water, cover, and cook until veggies are soft and tender. Uncover and mix green peas and green chilies. Leave them out if you don’t eat these veggies in vrat. 3-4 medium-sized Potatoes
2 tablespoon Vratki Green chutney
3 tablespoons Beaten Curd (yogurt)
1 teaspoon Dried mint leaves, crushed
2 teaspoon Lemon Juice
1/2 teaspoon Red chili powder
1 teaspoon Roasted cumin seeds, crushed
Salt to taste (rock salt)
2 tablespoons Chopped cilantro leaves – to garnish
2 tablespoons Oil/Ghee

The steps to follow are quite simple. First of all, gather all your ingredients then wash the potatoes. After that, combine the ingredients in a bowl and mix them well. 1 cup Sama Rice
1/2 cup Beaten Curd (yogurt)
1 tablespoon Unsweetened desiccated Coconut
1/2 teaspoon Lemon Juice
1 teaspoon Roasted cumin seeds
1/2 teaspoon Crushed red chili flakes
2 tablespoons finely chopped or shredded Cabbage (omit if you do not eat in vrat)
2 tablespoons finely chopped or shredded Carrots (omit if you do not eat in vrat)
1/2 teaspoon Citric acid
1 tablespoon Lemon Juice
1/2 teaspoon Eno (fruit Salt) or 1.5 teaspoon baking powder
Salt to Taste (rock salt)
Oil to Grease idli molds

The first step is to measure Sama rice. Then, soak them in water for 2 hours. After the desired time, drain the water. After doing so, assemble the rest of the ingredients. In a food processor add all the ingredients except Eno or baking powder. Ground it to a fine paste. Heat water in a pan. lubricate Idli molds. Just before pouring idli batter into the molds, put in ENO or baking powder and whip it well. Pour batter into idli molds. Place idli molds in the steaming pot, cover, and steam cook for 6-7 minutes. Steam idlis after 7 minutes. Allow it to cool for a while then remove it from the molds. Serve hot with coconut chutney or vrat chutney with your delicious idlis.
- SABUDANA VRAT DOSA
This quick and easy sabudana great dosa is a healthy diet option for vrat during MahaShivaratri. Just because you are on a vrat, doesn’t mean you cannot have tasty food on your plate. Enjoy making this dish with the following ingredients-
For making the batter, you will need-
1/2 cup Soaked Sabudana/Sago
1/4 cup Amaranth flour
2 tablespoons + 1 teaspoon Kuttu Flour
2 tablespoon Curd
Salt to taste (rock salt)
2 tablespoon Oil (to cook dosas)
For potato filling, you will need-
3 medium Boiled and cubed Potatoes
10-12 pieces of Curry leaves
1/4 teaspoon Each Mustard seed (omit if you do not eat in vrat)
1/4 teaspoon Haldi (omit if you do not eat in vrat)
1/4 teaspoon Red chili powder
1 tablespoon Oil
Salt to taste

The first step is to soak sabudana for 3 hours. Assemble the rest of the ingredients and after the desired time, strain soaked pearls through a strainer to get rid of excess water. Then, transfer it to a mixer and add curd. Grind it to a fine paste. Transfer this batter to a bowl. Stir in kuttuflour, salt, and red chili powder. Add Amaranth flour. Then, whisk it well. There should be no lumps in the batter and it should be of a thick dropping constancy. Start with an additional 3/4 cup of water to make the batter thin. Whisk it well and make it smooth and lump-free. Now to prepare the potato filling, first prepare the filling mixture. Boil, peel, and chop potatoes. Then, heat the oil in a pan. Add curry leaves, and mustard seeds and when they start to sputter add all the dry spices and add Vrat salt – Sendhanamak. Then, add in cubed potatoes and mix. After that just allow the mix to cool completely.
Now to make the dosa, just heat, and grease a griddle, and pour 1/4 cup of batter onto the hot griddle. Using a ladle spread dosa evenly on the hot Tawa. Drop 1-2 drops of oil around the cooking dosa. Cover and cook on low flame. Then, place a teaspoon of potato filling in the center. Unlike other dosas, this batter builds a sticky dosa since there is sabudana starch. After that, carefully roll it around the edges. Fold the other side and press gently so that they stick. Flip it over and serve immediately and enjoy it hot with Navratri chutney.
