1/2 cup arharki daal soaked for 5-6 hours
2 Tbsp vegetable oil
1 tsp jeera (cumin seeds)
1 1/2 tsp salt
1/8 tsp heeng powder
2 tsp green chilies
1 tsp chili powder
1 tsp khuskhus (poppy seeds)
2 Tbsp tamarind pulp
2 tsp sugar

For the cover of dal kachoris, you will need 1 cup refined flour, 3 Tbsp ghee/oil, 1/4 tsp baking powder, 1/2 tsp salt and oil for deep frying. The first step you will need to do is to draindaland then grind coarsely. After doing that, you should heat oil and add jeera. Then, when it splutters, start by adding ginger, heeng, green chilies and sauté until the color changes a bit. When you’re happy with the results, the next step is to add dal, salt, garam masala, chili powder, khuskhus, coconut and sauté till it’s fried. Fry it properly then move to the next step.
You will have to add about 1/4 cup water and cook till the dalis cooked through. Mix in the tamarind and sugar and keep aside. The next thing you should on to is mixing baking powder and salt into the flour. Onto it, rubghee/oil into the flour, add water and knead into the stiff dough then just rest, cover for 15 minutes. After that, make walnut sized rounds of the dal mixture.
After doing so, you need to break pieces of dough and roll into walnut sized rounds. Then, roll these flat into 1/4 inch rounds and pinch about 1/2 of the edge all around, leaving the center thicker. Now begin wetting the pressed edges, and place a ball of the filling in the center. Bring the wet edges together, covering the filling completely, and pinch together to seal. 1and half cups flour
5 tsp Oil / Ghee
A pinch of baking powder

1 cup Khoya
1/2 tsp green Cardamom Powder
25 gms finely chopped Almonds
25 gms Raisins (Kishmish)
25 gms dried Coconut
250 gms powdered sugar

First of all, we will prepare the dough for gujiya. For the dough, sieve the flour and mix the 5 tsp of oil/ ghee with the flour. You can use your fingers to mix well so that the mixture takes the form of breadcrumbs and binds to a certain extent. Then you should add some water and knead lightly. Keep in mind that you shall keep on adding water as required and knead into a soft but tight dough. Set aside and cover with a damp cloth for 20 mins.
Now start preparing for the filling part. For the filling, mash the khoya and roast it in a deep pan till light brown in color. Then, you shall stir constantly or the mava might burn. Then start adding sugar and cardamom powder into the khoya and mix well. After you are happy with the mixture, you should add almonds, cashews, coconut, and raisins. Then start roasting for a few minutes and remove from the heat. Allow everything to cool.
Then the next step is to divide the dough into small balls and roll each ball into a small round of 4-inch diameter. Then, fill half the round with the khoya mixture, fold it and seal the round, twisting the edges inwards. Do it carefully and take care that the filling does not ooze out. Then, prepare all the gujiyas and spread on a clean cloth.Heat the ghee in a pan and deep fry the gujiyas in batches on a medium flame.
