Then, when it splutters, start by adding ginger, heeng, and green chilies and sauté until the color changes a bit. 1 cup urad dal
1 green chili, chopped

The first step is to wash the lentils thoroughly 5-7 times in fresh water and soak them in enough water overnight, or at least for 5 hours in a cool dry place. Then, drain and transfer to a grinder.
Add chopped green chilies, ginger, cumin seeds, and asafoetida and grind to a fluffy smooth batter. Add little water in intervals while grinding, not more than 5 tbsp altogether. Transfer the batter to a big mixing bowl, add salt, and whisk it for a couple of seconds to make it airy.
In the meanwhile, heat oil in a wok for deep frying. With the help of a round bottom spoon, drop the batter into the hot oil and deep fry the vadas in batches. Keep the flame on low-medium so they get cooked properly from the inside. Fry till golden and crisp and drain on a paper towel. In a wide bowl, take some warm water.
Soak all vadas in the water for 25-30 minutes. Do not press or squeeze them at this point. Simply soak them giving them enough space to expand. You may use 2-3 separate bowls/pans for this purpose. Now, while the vadas are soaked, we will prepare the yogurt base (curd/dahi).
For it, take yogurt in a mixing bowl and whisk until smooth. Add enough water until desired consistency (not too runny) and beat till all mixed up. Add salt, black salt, and a pinch of sugar if you are adding it, mix everything well. Squeeze vadas gently by pressing them between your palms, and place them into the serving dish.
Pour the whisked yogurt over them evenly. Top with the green coriander chutney and tamarind dates chutney as required. Sprinkle with red chili powder, roasted cumin powder, chaat masala, and black salt as preferred. Grind together browned onion, cashew nuts, and 3 tbsp water to a smooth paste. Then, in the same pan, melt butter. Add bay leaf. Fry for a min and add crushed ginger & garlic.
Fry for 2-3 mins or till the raw smell goes. Add tomato puree. Cook till water reduces and oil starts appearing. Add Kashmiri chili powder, garam masala, cumin powder & salt. Fry for 2-3 mins or till oil starts appearing. Add 1-2 tbsp water to bring the masala together.
Add onion cashew paste and mix well. Add 1.5 cups hot water and bring to a boil. Add crushed Kasuri methi. Reduce flame to lowest and add Paneer. Mix well. Cover and cook for 7-8 mins.

To check for one-thread consistency, carefully dip the tip of your index finger into the syrup, touch your finger and thumb together and gently tease it apart. If one thread is shaped between your finger and thumb the syrup is complete.
