ingredients for Eggplant (Bhanta) Pakora Recipe
    • 4 medium eggplants
    • 1 cup gram flour
    • 1 tsp salt
    • 1 tsp pepper
    • ½  tsp ginger powder or
    • fresh ginger.
  • Oil for deep frying

Process of making Eggplant Pakora Recipe (Bhanta Pakoda)

    • Mix salt, ginger and pepper with flour;
    • add water to make medium batter.
    • Wash eggplant
    • and cut into 1-inch slices;
    • dip into the batter
    • and fry in hot oil till brown, turning once.
    • Serve with mint achar.
  • Serves upto 6 person

Variation: Cauliflower can be substituted for the eggplant. It needs to be blanched before frying.
