1. Din Kee Beef Noodle
Din Kee is a small hawker stall located in GuangXing Long kopitiam, an old residential area of Bukit Indah. The thick strips of beef grab your attention right away when you open the bowl of beef noodles. Your nose will be greeted by the beefy smell.
Tossing sauce is a rich and flavorful mixture of dark soy, garlic, and fried shallots. It’s made from thick, syrupy beef stock, which is made by boiling meat bones and beef bones. Ah Koon, Ah Koon’s boss, makes fresh beef stock every day. This takes five long hours of slow cooking.
The flat rice noodles can be served with blended sauce. Give the kway teow a toss in some of the blended sauce. It was delicious with the beefy sauce and kway Teow. Thin strips of tender, lean beef were cut into chunks/ pieces similar to thick fries/ wedges. The tender beef chunks/ strips were soft and the mild sauce let the bovine flavors shine through.
Although the beef tendon isn’t very flavourful, it does have an interesting texture. The tendons were soft and bouncy, with a jelly-like texture. They also took on the sweet tossing sauce’s flavor. The fresh chili sauce is also savory, and tart, and has a sharp, lingering sting. This makes it a great choice for chili lovers.
